Hey friends! Today will be quick, but very tasty. Packed with flavors, spices and crunchiness. All the good things, if you ask me.
As you may remember, I love pickles! So it was the only right thing to do, to finally put up a recipe, that will involve pickling. And I would like to start with this incredibly tasty, crunchy and aromatic, pickled sugar snap peas with mint.
While searching for some inspiration few weeks ago, I came across this superb blog, called White on Rice Couple , and I saw this post about Pickled Sugar Snap Peas . And I knew I will be making it ASAP…so here we are today, despite the fact that I meant to be posting recipe for gherkins. But just because I’ve chosen pickled sugar snap peas over gherkins, doesn’t mean they will be forgotten. At the end of the day, gherkins are probably about 50% of my DNA. However, we will concentrate on sugar snap peas for now…
Sugar snap peas are my favorite type of peas, because of their crunchiness and sweetness. Also, because as a kid, I used to spend every day at my grandma’s garden, packed with these awesome peas, and eating them straight from the plant, and to this day, they remind me of these careless days, when my biggest worry was how long my parents will allow me to stay outside for, to play and climb trees (as these were two main and most important activities back then).
However, none of us ever pickled these beauties, and I really can’t figure out why!?! We are the biggest fans of pickles (not just my family, but the whole of Eastern Europe, I’m pretty sure about that), so I was genuinely surprised and intrigued when I saw this recipe and was not familiar with it…
So, after trying it for the first time, I could not help it, but feel like I’ve been missing out for sooooo long!!! The taste is incredible!!! Also, the combination of peas and mint is one of these timeless classics, and they just work so well together! Plus it’s so easy to make, and doesn’t require any special equipment. Easy- sugar-snap-peasy 🙂
Ever since trying them for the first time, the big jar of pickled sugar snap peas have permanently moved in to my fridge. They will be living there, rent free forever… Ready, steady, pickle!
- 450 g sugar snap peas
- 1/2 medium red onion
- 1/2 cup fresh mint
- 1 cup water
- 2/3 cup distilled white vinegar
- zest of 1 large lemon
- 3 tbsp lemon juice
- 1 tbsp sugar
- 1/2 tbsp salt
- 2 tsp pickling spice
- 1 tsp cumin seeds
- 1-2 leaves bay
Trim the ends of the peas and slice the onion and chop the mint.
Using a large jar (about 2L), layer the peas, onion and mint.
To make brine, combine water with vinegar and all the rest of the ingredients in a large bowl.
Pour the brine into a jar with peas, covering them completely.
Place in the fridge for at least 3 hours.
