Berry tarts with coconut cream

Delicious, raw treat, berry tarts filled with coconut cream and fresh fruit! Perfect summer treat!

  • 10 medjool dates
  • 1/3 cup pistachios
  • 1/4 cup walnuts
  • 1/3 cup pumpkin seeds
  • 1/2 cup almonds
  • 2 tbs agave syrup
  • 400 ml coconut cream
  • 1 tsp vanilla essence
  • 1 tsp lemon juice
  • 2 tsp coconut sugar


  1. In a food processor, blend your dates, nuts, seeds and agave syrup until it forms sticky paste
  2. Fill the bottom of your tart tins with paste, pressing gently
  3. Using electric whisk, stir together coconut cream, vanilla, lemon juice and coconut sugar for about 3-4 minutes
  4. Fill top part of tins with cream and leave in the fridge for 25- 30 min allowing the cream to set
  5. Remove from fridge and decorate with fresh mint and berries, you can add sprinkle of crushed pistachios or coconut shreds as well
  6. Enjoy!

Use fresh mint and your favourite selection of fruit to decorate.
