Avocado and Clementine Salad with Pomegranate

Refreshing, easy and healthy salad made with juicy clementines, avocados and pomegranate.

Ingredients

  • 2 ripe avocados (peeled and sliced)
  • 4 medium clementines (peeled and sliced horizontally)
  • 120 g pomegranate seeds
  • 80 g pine nuts
  • 130 g rocket

For the dressing

  • 1 tbsp caraway seeds
  • 4 medium clementines (zest and juice only)
  • 1 tbsp fresh parsley
  • 100 ml extra virgin olive oil

Instructions

  1. In a large bowl, mix all the salad ingredients together.

To make dressing:

  1. Place the caraway seeds in a small, dry frying pan over a medium heat and toast them for couple of minutes until they are fragrant. Using pestle and mortar, gently crush the seeds and return back to the pan with clementine juice and zest, simmer for couple more minutes. Set aside and allow to cool.

  2. Add parsley and gently whisk in the olive oil. Season if needed. Pour over salad and enjoy.
