However, if you feel like you have over- indulged on all of the festive food, chocolates and drinks, today's post is for you! As it's a super clean, beautifully crunchy, fresh broccoli salad with an incredibly smooth and creamy cashew dressing punching with great flavours! Ready? Let's go! 🙂
As we all know, January is the month for all the new year resolutions, and it's not a secret that a high percentage of population will be on some kind of a diet this month. I won't be, as I do not believe in diets... Yup, I would rather cut my leg off, than go through a misery of dieting. And I love food too much, to deprive myself of eating it. But, with that said, I have overdosed on the cake last month, so I've decided to stick to lots of fresh veggies and cut down on sugar. Also, I did book myself into a spinning classes, which I am yet to attend... 😉
But enough about new year resolutions. Let's talk food! Today's recipe is a really easy, quick, and super fresh. Delicious, healthy broccoli salad with red cabbage, raisins, almonds and super creamy cashew dressing. Yum & yummo! 🙂
Broccoli is one of my favourite vegetables, and it's packed with all essential vitamins and minerals. One cup of broccoli contains about 43 milligrams of calcium, which is a nice contribution to our daily need. And did you know that same cup of this green goodness has more vitamin C than you need in the entire day? Well, now you do! 🙂
If you remember my post about clementine cordial, where I talked about excessive amounts of clementines after festive season, you will know that I do not like to waste food. And this broccoli salad with creamy cashew dressing is another proof that you can use your leftover veggies and still have super healthy, nutritious meal, without breaking the bank. Clementines are in season now, and I love adding citrus flavours to my salads, they work great in dressings and sauces, and it's another great way of using up any citrus fruit, that have seen a better days.

Broccoli Salad with Creamy Cashew Dressing
Ingredients
For the salad:
- 400 g fresh broccoli
- 200 g red cabbage
- 5 spring onions
- leaves fresh mint optional
- ½ teaspoon caraway seeds
- 1 tablespoon golden raisins
- 1 tablespoon flaked almonds
For cashew dressing:
- 200 ml freshly squeezed clementine juice
- 3 tablespoon cashew butter
- 1 tablespoon tamari sauce
- 2 tablespoon olive oil
- clove garlic
- ½ teaspoon sea salt
Instructions
- Cut broccoli into small florets and place in a large bowl.
- Finely shred the red cabbage, chop the spring onions and handful of mint leaves (if using) and add to the bowl.
- Add caraway seeds, golden raisins and almonds and toss together.
- To make dressing: place all the ingredients into blender and blend for couple of minutes.
- Pour the cashew dressing over the salad, sprinkle with some more almonds and raisins.
- Enjoy!
Please note that all my recipes are developed and tested in metric grams. I recommend that you use digital scales for a more accurate results. I have provided a conversion to US customary in the recipe but please note that I haven’t tested using this method.

I saw this recipe and thought it would be great for my other half. She's a vegan but doesn't mention it too often which is nice. It also turns out that she has a slight nut allergy which came as a shock to us both. Still, it looked and tasted amazing.
