This is some serious stuff, cookie stuff. Trust me, after trying this recipe, you will not believe you have survived for so long without it! It’s also super quick and easy to make, just like the disappearance of them!
I was going to give them to one of my friends as a ‘happy Tuesday’ gift, but changed my mind straight after they came out of the oven (#sorrynotsorry), so…happy Tuesday to me! Sooner you make them, sooner you will be beaming with happiness. And there is always 6 more days in the week, so possibilities of happiness are endless! Yayyy!
Another great feature of these perfect cookies- no refined sugar! They are clean from any nasty ingredients, so you can enjoy them and not feel that guilty about destroying the whole tray of them in one go. Ka-ching!
- 1 cup spelt flour
- ½ cup almond flour
- 2 tbs cocoa powder
- 1 tbs baking powder
- ⅓ cup coconut oil melted and cooled
- ⅓ maple syrup
- 1 tbs vanilla essence
- 1 tbs almond butter
- ½ cup of chocolate chips
- Chocolate drizzle:
- 2 tbs coconut oil
- 2 tbs cocoa
- 2 tbs maple or agave syrup
In a large bowl mix together flours, cocoa and baking powder
In a separate bowl mix together coconut oil, maple syrup, almond butter and vanilla essence
Add your liquid mixture into bowl with dry ingredients and mix well
At the end, add chocolate chips and mix well
Scoop the mixture with your hands, forming small balls and placing them on a baking tray with parchment paper
Once you used all the mixture, flatten the cookies with palm of your hand gently
Bake in the oven in 160 Celsius for 8-10 minutes
Take out of the oven and let them cool
In a small pan, melt coconut oil on a small heat, add cocoa powder and keep stirring until well combined, finally add your agave or maple syrup, keep stirring until well combined
Take off the hob and drizzle over your cookies
This recipe should make about 15- 20 cookies, depending on the size of your cookie.
