I hope your week went well and like me, you have been making the most of the Summer? If anything, I have probably been enjoying it a bit too much, but you have to make the most of it while it lasts, right?
July is a month of many birthdays among my family and friends. My dad's and mine included. So I thought it's only fair to celebrate with a classy cocktail recipe. Plus, I only ever published two cocktail recipes, this bergamot mojito and New Year breeze cocktail. So it's about time I expand this selection!
Frozen pineapple margaritas
These pineapple margaritas are literally out of this world! The recipe is inspired by this one from the Foolproof Living. They are perfect cocktails to serve at any party, but they are especially good during summer months. Because the recipe is using frozen pineapple, it will keep you cool as cucumber during a hot day. This cocktail is full of sweet, fruity and tropical notes, with some quenching lime and characteristic tequila flavours. It guarantees to keep your guests happy, but be prepared, because they will keep coming for more!
What ingredients do I need to make frozen pineapple margaritas?
As with any margarita cocktail, this recipe is based on tequila. I'm using gold tequila here, but silver one is what most of the recipes call for. Whichever you choose, it will taste amazing, so let's not worry about that!
Other than tequila, you will need an orange liquor, like triple sec or Cointreau, healthy amount of fresh limes, frozen pineapple chunks and some cane sugar syrup. Sugar syrup is not necessary, but it adds some extra sweetness, however, if you don't have any on hand, use a couple of tablespoons of brown sugar instead.
As with any well-made cocktail, garnishes are a must! You can use slices of lime or chunks of pineapple and some fresh mint. Or go crazy and use all of them together!
I love using a mix of sea salt and chilli powder to rim the glasses with, and I highly recommend trying that mix! It goes sooooo well with sweetness of pineapple and sharpness of lime and tequila. If you are not a fan of salt on your cocktail glass, swap it for sugar. Add some lime or lemon zest to it if you are feeling really fancy!
Making the pineapple margaritas
This part could not be any easier. You simply put all of the ingredients (minus the garnishes, obvs) into a blender and blend until smooth. Decorate the rim of the glasses with salt or sugar. You can also add some crushed ice into the glasses, but because of the frozen pineapple, they will already be quite cold and cool. Add some garnish, and voila! The recipe for a perfect party is ready!

Frozen Pineapple Margaritas
Equipment
- Blender
Ingredients
- 115 ml tequila
- 40 ml Cointreau Orange Liqueur (or triple sec)
- 30 ml cane sugar syrup
- 80 ml freshly squeezed lime juice
- 300 g frozen pineapple chunks
For the garnish:
- 2 small limes
- 1 medium pineapple slice
- 1 small bunch of fresh mint
For the rim:
- 2 tablespoon sea salt
- ½ teaspoon chilli powder
Instructions
- Cut one lime into slices and the other into wedges. Set aside.
- Place all the ingredients for the margaritas in the electric blender and blend until smooth.
- Mix the sea salt and chilli powder together, take a lime wedge and run it over the rim of your glass. Dip the rim of the glass into the sea salt and chilli mix. Pour the cocktails into the glasses and enjoy!
Please note that all my recipes are developed and tested in metric grams. I recommend that you use digital scales for a more accurate results. I have provided a conversion to US customary in the recipe but please note that I haven’t tested using this method.
