Refreshing and super fragrant bergamot mojito recipe! Perfect green drink for St Patrick's Day!

300ggolden caster sugar
30freshmint leaves(plus extra for garnish)
2mediumbergamots(juice and zest)
In a medium saucepan, mix together sugar and 1 ltr of water, bring to the boil and cool down to room temperature.
In a food processor, blend together mint, lime juice, bergamots zest and juice and lemon juice. Add sugar syrup and blend until combined. Pour into plastic container and freeze, stirring with a fork every 30 minutes until frozen.
Scoop the granita into chilled glasses, garnish with lime, lemon skin/ peel and fresh mint.
Cooking time does not include freezing time (3-4 hours).You can top it up with soda.Use a tiny pinch of spirulina powder or green food dye to give your mojito super green appearance. If you can't find any Sorrento lemons, use the ordinary lemons.
