Super easy and utterly delicious peach cobbler made with only few simple ingredients. Top it with some ice cream for the ultimate treat!
vanilla bean paste
light soft brown sugar
Pre heat the oven to 170 C. Lightly grease the baking dish with some butter.
Slice the peaches and transfer to the baking dish. Sprinkle with 50 g of caster sugar, add vanilla bean paste and gently mix together and set aside.
In a medium mixing bowl, mix together melted butter, flour, sugar, cinnamon, baking powder, and salt until the texture resembles large breadcrumbs.
Add chunks of cobbler on top of the sliced peaches, as you would do with streusel topping. Place in the oven and bake for about 25 minutes until juicy and bubbly around the edges.
After 25 minutes, sprinkle the top of the cobbler with some light soft brown sugar and bake for further 5-10 minutes, then place it under the grill to finish, for about 5 more minutes.
Take out of the oven and allow to cool for 10 minutes. Serve the peach cobbler with some vanilla ice cream. Enjoy!
