This is a great quicker alternative to making an ordinary pizza, perfect for lunch or dinner!

1tspmild or hot curry powder
2tbspolive oil(plus extra for drizzling)
½mediumcauliflower(cut into floretts)
4smallnaan breads(can use pitta breads too)
4tbsptomato puree(or passata)
8mozzarella slices or vegan mozzarella slices (recipe below in 'Notes')(optional)
1smallred onion(thinly sliced)
1smallred chilli(thinly sliced)
1smallgreen chilli(thinly sliced)
Pre- heat the oven to 200C. Line up the baking tray with baking paper.
In a medium bowl mix all the spices and oil and add cauliflower. Mix well, then place cauliflower on a baking tray and bake for about 20 minutes or until it's golden brown.
Place the naan breads on a baking tray and spread each one of them with passata. Top up with mozzarella (if using), cauliflower, red onion and chillies. Drizzle with some more olive oil and bake for 15 minutes. Serve with yoghurt dip or your favourite sauce.
