Refreshing, easy and healthy salad made with juicy clementines, avocados and pomegranate.

2ripeavocados(peeled and sliced)
4mediumclementines(peeled and sliced horizontally)
For the dressing
4mediumclementines(zest and juice only)
100mlextra virgin olive oil
In a large bowl, mix all the salad ingredients together.
To make dressing:
Place the caraway seeds in a small, dry frying pan over a medium heat and toast them for couple of minutes until they are fragrant. Using pestle and mortar, gently crush the seeds and return back to the pan with clementine juice and zest, simmer for couple more minutes. Set aside and allow to cool.
Add parsley and gently whisk in the olive oil. Season if needed. Pour over salad and enjoy.
