Broccoli Salad with Creamy Cashew Dressing

Quick and delicious broccoli salad packed with all the good stuff! Plus creamy cashew dressing.

For the salad:

  • 400 g fresh broccoli
  • 200 g red cabbage
  • 5 spring onions
  • leaves fresh mint optional
  • 1/2 tsp caraway seeds
  • 1 tbsp golden raisins
  • 1 tbsp flaked almonds

For cashew dressing:

  • 200 ml freshly squeezed clementine juice
  • 3 tbsp cashew butter
  • 1 tbsp tamari sauce
  • 2 tbsp olive oil
  • clove garlic
  • 1/2 tsp sea salt


  1. Cut broccoli into small florets and place in a large bowl.
  2. Finely shred the red cabbage, chop the spring onions and handful of mint leaves (if using) and add to the bowl.
  3. Add caraway seeds, golden raisins and almonds and toss together.
  4. To make dressing: place all the ingredients into blender and blend for couple of minutes.
  5. Pour the cashew dressing over the salad, sprinkle with some more almonds and raisins.
  6. Enjoy!

Recipe Notes

You can use orange juice instead of clementine juice.
