Welcome back after Easter holidays! Did you have a good one? I certainly did, we went away to Ireland to visit some friends, where I also have become a godmother to a sweet baby girl! Let's leave the fact that my liver is still recovering after that visit out for now...
So, what do I have for you today? Well, I think it's safe to say this is one of the tastiest, easiest and most addictive healthy snacks ever! The chocolate peanut butter energy bites, made with 5 simple ingredients, that require no baking or cooking at all! It's just scoop, roll and refrigerate. Sounds good? Then let's get into it...
I must admit, I've been somewhat of the energy bites virgin until last year. A friend of mine introduced me to the energy bites when I was still working in the office, and every day, around 4 pm I will sniff around her desk, scouting for some snacks (it was great for killing the time until 5 pm finish too!). I was hooked from the first bite, but what I need to mention, is that it was a shop-bought energy ball, by a very well known brand.
When a couple of days later, I was doing my weekly food-shopping, the energy bites (or balls or bits, or whatever you wanna call them) where at the top of my list. But to my surprise, after seeing the price tag on them, I've experienced a tiny-eeny-meeny heart attack. It was £2.00 per bite! And I'm aware that £2.00 is not a lot of money, but when you realise that you can probably make an entire batch for that price, it puts things into perspective. So at that moment, I knew I will be making my own energy bites, and I never looked back!
The list of the ingredients couldn't be simpler. All what's required to make the chocolate peanut butter energy bites is some peanut butter, coconut flour (which BTW, to this day I have not managed to successfully use in any other recipe), cocoa powder, maple syrup and vanilla bean paste. It's seriously that simple.
These chocolate peanut butter energy bites are just perfect as 'on-the-go' snack, they are great to keep a stash on hand for those times when you simply need a quick, little burst of energy, but don’t want to eat a junk-food snack or don’t really want a meal. They will be great as a pre or post-workout snack, or ideal companion to take on a hiking trips or long walks.
Using a coconut flour makes this recipe naturally gluten-free, they are also packed with protein and healthy fats from the peanut butter. If you do not have any coconut flour to hand, you can use desiccated coconut flakes, but you will need to use food processor or blender, to blitz them a bit in order to make the flakes as small as possible. You can also use almond flour or almond meal instead of the coconut.
They will last for couple of weeks in the fridge, just make sure to transfer them into an airtight container. But I dare you to have them lasting that long...

Chocolate and Peanut Butter Energy Bites
- 300 g smooth peanut butter
- 30 g cocoa powder
- 50 g coconut flour
- 75 ml maple syrup
- 1 tsp vanilla bean paste (optional)
- Place all the ingredients in a medium bowl and using a wooden or plastic spatula, mix until they are all incorporated well together.
- Line up the baking tray with baking parchment. Scoop the paste (I've used 1 tbsp measure) and roll into small balls using your hands, then place on the baking tray. Once you have used all of the paste, place the energy bites in the fridge for about 30 minutes, allowing them to firm up a bit. Enjoy!
- You can substitute coconut flour for almond flour or almond meal
- Keep your energy bites in the airthight container in the fridge for up to 2 weeks.
